Vinification: the grapes are harvested in 20 kg baskets and undergo a manual selection on a special sorting table. Submeged cap fermentation occurs utilizing only indigenous yeasts and without additives. Great care is taken during pump overs and punch downs over the course of 10/15 days, followed by an additional maceration lasting roughly a week. The malolactic fermentation is induced only with the aid of a slight increase in temperature of the free-run juice. Ageing takes place in 300 L oak barrels for 12 months, followed by an additional year in 25 hL casks. The wines are racked as infrequently as possible (twice per year).
Wine: delicate and harmonious in certain respects, powerful and robust in others, this is a demanding, complex and elegant wine. Its grandeur is revealed just a few months after bottling, and gradually increases as the floral aromas of its youth give way to ethereal spices, chocolate and truffle.
